A traditional combination of spicy green chili peppers, galangal, lemongrass, sweet basil, and kaffir lime create this smooth sauce. Coconut milk gives the sauce a rich taste; while small Thai eggplant adds texture. Thai curries are most often served with jasmine rice. In Asia, a spoonful of curry is added to a small portion of rice to cool the palate and help control the heat of the chilies.
